屠宰前禁食时间对肉鸡糖代谢、肉品质、血清生化和应激指标的影响

摘要 本试验旨在研究屠宰前禁食时间对肉鸡糖代谢、肉品质、血清生化和应激指标的影响。试验选用42日龄爱拔益加(AA)肉鸡50羽,随机分为5组,每组10个重复,每个重复1羽。各组肉鸡屠宰前分别禁食0(对照)、6、12、18和24 h。结果表明:随着禁食时间的延长,血清葡萄糖、肝脏糖原和腿肌糖原含量呈线性和二次曲线显著降低(P<0.05)。随着禁食时间的延长,胸肌和腿肌pH24 h均呈线性和二次曲线显著升高(P<0.05),胸肌和腿肌亮度值、蒸煮损失和剪切力呈线性和二次曲线显著降低(P<0.05)。随着禁食时间的延长,血清白蛋白、尿酸含量和丙氨酸氨基转移酶活性呈线性和二次曲线显著降低(P<0.05),血清天冬氨酸转氨酶、肌酸激酶活性和皮质酮含量呈线性和二次曲线显著升高(P<0.05)。结果提示,屠宰前禁食时间≥ 12 h会造成禁食应激加剧,合理的禁食时间(6~12 h)可以提高肉品质。

Abstract: This study was conducted to evaluate the effects of pre-slaughter fasting time on carbohydrate metabolism, meat quality and serum biochemical and stress indexes of broilers. Fifty 42-day-old Arbor Acres (AA) broilers were randomly divided into 5 groups with 10 replicates per group and 1 broiler per replicate. The pre-slaughter fasting times in 5 groups were 0, 6, 12, 18 and 24 h, respectively. The results showed that the contents of serum glucose, hepatic glycogen and muscle glycogen were significantly linear and quadratic decreased with fasting time extended (P<0.05). The pH24 h in breast muscle and leg muscle was significantly linear and quadratic increased with fasting time extended (P<0.05), and the lighteness value, cooking loss and shear force in breast muscle and leg muscle were significantly linear and quadratic decreased with fasting time extended (P<0.05). The albumin and uric acid contents and alanine aminotransferase activity in serum were significantly linear and quadratic decreased with fasting time extended (P<0.05), and the aspartate aminotransferase and creatine kinase activities and corticosterone content in serum were significantly linear and quadratic increased with fasting time extended (P<0.05). In conclusion, the pre-slaughter fasting time ≥ 12 h will intensify the fasting stress of broilers, the reasonable fasting time (6 to 12 h) can improve the meat quality.
