Main Factors Affecting Porcine Intermuscular Fat Deposition and Potential Regulation Mechanism

Abstract:Fat deposition, especially intermuscular fat deposition, is closely related to the pork quality. Genetics, nutrition and environment are considered to be the main factors affecting fat deposition, although the mechanisms are not clear. Based on previous studies, this paper has summarized the differences in fat deposition between species and individual parts, the regulatory effects of genes, proteins and enzymes in the major signaling pathways affecting fat deposition on fat oxidation and synthesis, as well as the effects of nutrition on intermuscular fat deposition and meat quality, in order to provide reference for the research and application of improving pork quality by regulating intermuscular fat depositon.
