Production of Lard Enriched n-3 Polyunsaturated Fatty Acid and Its Effects on Serum Lipid in Rats

Abstract

This experiment was conducted to study the enrichment of n-3 polyunsaturated fatty acids (n-3 PUFA) in abdominal fat of pigs, and the effects of lard enriched n-3 PUFA on serum lipid in rats. Fifteen gilts (Landrace×Min pig) with (60±2) kg initial average weight were randomly allotted to three groups with five replicates and one gilt per replicate, which were reared in individual pens. The control diet was the corn-soybean meal-wheat bran diet, while the experimental diets were added 10% linseed and 10% linseed+200 mg/kg vitamin E based on the control diet, respectively. All pigs were slaughtered on 56 d, and sampled the abdominal fat to determine the content of n-3 PUFA. The results showed that n-3 PUFA content in lard of pigs in experiment groups was higher than that in control group (P<0.05). Sixty SD rats aged 36 d were assigned to four groups with three replicates, and five rats per replicate. Rats in control group Ⅰ were fed a basal diet without oil, and rats in control group Ⅱ, and experiment groups Ⅲ and Ⅳ were fed the diets which were added decocted lard from the corresponding groups of gilts, respectively. The content of serum lipid was determined after four weeks. The results showed that the rats fed 10% lard had significantly more total cholesterol in serum than those in the group without lard (P<0.05), and total cholesterol in serum of rats in control group Ⅱ was higher than that in other groups, but the difference was not significant (P>0.05). The triglyceride and high density lipoprotein cholesterol among groups were not significant (P>0.05). However, serum low density lipoprotein cholesterol of rats in control group Ⅱ was significantly higher than that in other groups (P<0.05). It was indicated that the lard enriched in n-3 PUFA could decrease serum lipid, and play a role in preventing the formation of cardiovascular disease.[Chinese Journal of Animal Nutrition, 2010,22(2):410-415]
