摘要

本试验旨在研究饲料中添加不同水平的维生素K3对松浦镜鲤体成分、肉质和抗氧化能力的影响。在以豆粕和鱼粉为蛋白质源的基础饲料(维生素K1含量为0.54 mg/kg)中分别添加0、5、10、20、40、80和2 000 mg/kg的维生素K3(甲萘醌烟酰胺亚硫酸盐),配制成7种试验饲料。选取初始体重为(2.58±0.16) g的松浦镜鲤幼鱼525尾,随机分为7组,每组设3个重复,每重复放养25尾,在水温24 ℃、溶氧7.46~8.61 mg/L条件下饲喂60 d。结果表明,添加不同水平的维生素K3对松浦镜鲤的体成分(水分、粗蛋白质、粗脂肪、灰分含量)以及肝胰脏中丙二醛(MDA)含量均无显著影响(P>0.05);0 mg/kg组的剪切力显著小于其他各组(P<0.05);10 mg/kg组的pH24 h显著小于其他各组(P<0.05),滴水损失显著大于0和5 mg/kg组(P<0.05),肝胰脏超氧化物歧化酶(SOD)活性显著大于0和5 mg/kg组(P<0.05),肝胰脏还原型谷胱甘肽(GSH)含量显著大于2 000 mg/kg组(P<0.05);10和20 mg/kg组的肝胰脏总抗氧化能力(T-AOC)显著大于0、80和2 000 mg/kg组(P<0.05),但二者差异不显著(P>0.05)。通过折线模型对饲料中维生素K3添加水平和肝胰脏中T-AOC进行一元回归分析,得出T-AOC最高时的维生素K3的添加量为16.89 mg/kg。由此得出,饲料中添加维生素K3可提高松浦镜鲤肌肉的剪切力,降低肌肉的系水力;不添加或过量添加维生素K3均会降低松浦镜鲤的抗氧化能力,其适宜添加量为16.89 mg/kg。

Abstract

This experiment was conducted to study the effects of different dietary vitamin K3 levels on body composition, meat quality and antioxidant capacity of Songpu mirror carp. A total of 525 juvenile Songpu mirror carp with average body weight of (2.58±0.16) g were randomly allocated into 7 groups with 3 replicates per group and 25 fish per replicate. The fish in 7 groups were fed the basal diet (vitamin K1 content was 0.54 mg/kg) supplemented with 0, 5, 10, 20, 40, 80 and 2 000 mg/kg vitamin K3 (menadione nicotinamide bisulfite, MNB), respectively. Under the conditions of water temperature 24 ℃ and dissolved oxygen 7.46 to 8.61 mg/L, the experiment lasted for 60 days. The results showed as follows: different levels of vitamin K3 supplementation could not affect the body composition (moisture, crude protein, ether extract and ash contents) and the hepatopancreas malonyldiadehyde (MDA) content of Songpu mirror carp (P>0.05). The shearing force of Songpu mirror carp in 0 mg/kg group was significantly lower than that in other groups (P<0.05). In 10 mg/kg group, the pH24 h was significantly lower than that in other groups (P<0.05), but the drip loss and superoxide dismutase (SOD) activity in hepatopancreas were significantly higher than those in 0 and 5 mg/kg groups (P<0.05), and the glutathione (GSH) content in hepatopancreas was significantly higher than that in 2 000 mg/kg group (P<0.05); the hepatopancreas total antioxidant capacity (T-AOC) in 10 and 20 mg/kg groups were significantly higher than those in 0, 80 and 2000 mg/kg groups (P<0.05), but no significant difference was found between 10 and 20 mg/kg groups. The linear regression result showed that the requirement for vitamin K3 of Songpu mirror carp which had the highest T-AOC was 16.89 mg/kg diet. In conclusion, adding vitamin K3 in diet can improve the muscle shearing force and reduce the muscle capacity of holding water of Songpu mirror carp. Whether no or excessively adding vitamin K3 can reduce the antioxidant capacity of Songpu mirror carp, and its optimum addition level is 16.89 mg/kg diet.[Chinese Journal of Animal Nutrition, 2011, 23(6):1058 -1064]
