摘要

木聚糖酶已广泛应用于饲料、食品加工、纸浆漂白等领域,然而近年研究发现在小麦等谷物中存在一种能抑制木聚糖酶活性的蛋白质性质的成分,称为木聚糖酶抑制蛋白。木聚糖酶抑制蛋白具有多型性,但不同类型抑制蛋白都只作用于外源木聚糖酶,而对谷物内源性木聚糖酶没有抑制作用。这就对木聚糖酶应用领域中酶功效的发挥提出了挑战:抑制蛋白的存在是否影响外加木聚糖酶的作用?目前仅在面包焙烤、谷朊粉-淀粉分离和动物饲料等领域有相关的研究,本文即综述木聚糖酶抑制蛋白对这些领域中木聚糖酶功能的影响作用。

Abstract

Xylanase is widely used in many areas such as animal feed preparation, food processing, and pulp and paper industry. Yet recently a proteinaceous component named xylanase inhibitor protein is found existing in cereals like wheat, which is capable of inhibiting xylanase activity. Xylanase inhibitor protein shows a multi-type feature, whereas all types of inhibitor proteins only inhibit the exogenous xylanases added to the medium and exhibit no inhibition activity towards the known endogenous cereal xylanases, leaving a challenge to the function display of xylanases used in the processing areas. A question was then put forward that whether the presence of xylanase inhibitor protein could affect the functionality of added xylanases. The present studies related to this question merely appeared in the areas such as breadmaking, gluten-starch separation, and animal feed preparation. The effects of xylanase inhibitor protein on xylanase functionality in these areas were reviewed in this paper. [Chinese Journal of Animal Nutrition,2011,23(3):381-386]
