本文研究3种不同饲养方式对肉鸡生产性能、肉质性状及肌肉组织学特性的影响。试验选择体重相近[(367.66±1.12) g]、健康的21日龄爱拔益加(AA)肉公鸡480只,随机分为3个试验处理:网上平养、室内地面平养及半舍饲(即连接有户外运动场的室内地面平养),后两者以稻草作为垫料。每个处理设4栏,每栏为1个重复,每个重复40只鸡。试验至49日龄结束。结果表明:1)肉鸡平均日采食量在各处理间没有显著差异(P>0.05),但半舍饲肉鸡死亡率和料重比增加(P<0.05),平均日增重显著低于网上平养肉鸡(P<0.05);2)半舍饲肉鸡腹脂率显著低于其他2个处理的肉鸡(P<0.05),胸肌剪切力显著高于其他2个处理的肉鸡(P<0.05),胸肌肌纤维直径在3种饲养方式的肉鸡中最大,其次为室内地面平养肉鸡、网上平养肉鸡(P<0.05),肌纤维密度则与此相反(P<0.01);3种饲养方式对肉鸡胸肌pH、滴水损失、肌内脂肪及肌苷酸含量没有显著影响(P>0.05)。从以上结果可知,在3种饲养方式中,半舍饲肉鸡生产性能较低,同时腹脂率减少,胸肌肌纤维较粗,肉质较坚韧。
The effects of three housing systems on performance, meat quality and muscular histological characteristics of broilers were investigated. Four hundred and eighty 21-day-old healthy male Arbor Acres (AA) broilers with the similar weight of (367.66±1.12) g were randomly assigned to one of the three housing systems: net-rearing and floor-rearing with or without outdoor access. Straws were used as the bedding of broilers in floor-rearing with or without outdoor access. Four pens were placed in a rearing pattern containing forty birds each, and a pen was a replicate. The experiment ended at 49 days of age. The results showed as follows: 1) there were no significant differences in the average daily feed intake of the broilers among three treatments (P>0.05), while the broilers in floor-rearing with outdoor access showed higher mortality and feed to gain ratio (P<0.05), and the average daily weight gain was lower than that in net-rearing (P<0.05); 2) the abdominal fat proportion of the broilers in floor-rearing with outdoor access was significantly lower than that in the other two groups (P<0.05), the shear force was significantly higher than that in the other two groups (P<0.05), and breast muscle fiber diameter was the largest in the three treatments, followed by that of broilers in floor-rearing without outdoor access, and then in net-rearing (P<0.05), but as to the muscle fiber density it was in reverse order; there were no significant differences in pH, drop lose, intramuscular fat (IMF) and insine monphosphate (IMP) of breast muscle among the three housing systems (P>0.05). The results suggest that among the three housing systems, the broilers in floor-rearing with outdoor access show lower performance, lower abdominal fat proportion, thicker breast muscle fiber and harder meat.[Chinese Journal of Animal Nutrition, 2010,22(5):1237-1242]
