摘要 壳聚糖(chitosan)是甲壳素脱乙酰基后的产物,是天然多糖中唯一的碱性多糖,其自然资源丰富、安全无毒、不产生耐药性、生产成本低,具有改善动物生长性能、增强机体免疫力、调节脂肪代谢、抗菌抑菌和抗氧化等多种生物学功能,被认为是具有广泛开发前景的绿色添加剂。本文就壳聚糖生物学特性、生理功能及其在畜禽生产中的应用现状进行综述,以期为其在畜禽生产中的应用提供参考依据。

Abstract: Chitosan is an active product converted from chitin by deacetylation, which is the only alkaline polysaccharide in natural polysaccharidea. It is a kind of rich natural resource, characterized by safety, no residue, non-drug resistance and low cost of production. Chitosan has many biological functions such as improving animal growth performance, enhancing the immunity, regulating fat metabolism, bacteria resistance and bacteriostasis and improving the antioxidant capacity which is considered as a kind of green additive with broad development prospects in livestock and poultry production. This article reviewed the biological characteristics, physiological functions and application of chitosan in livestock and poultry production so as to provide the reference for its scientific application in livestock and poultry production.
