摘要

反刍动物的肉和奶为人类提供高质量蛋白质、必需矿物元素和脂溶性维生素,同时也是人类饮食结构中饱和脂肪酸和反式脂肪酸的主要来源。临床医学研究证明,过量的摄入饱和脂肪酸和人工合成的反式脂肪酸会增加机体患心脑血管疾病的风险,人类的饮食与其慢性病的演化过程密不可分。为此,本文综述了反刍动物肉和乳产品中脂肪酸合成的代谢机制,以及通过营养调控和基因选择手段改善反刍动物肉和乳产品中脂肪酸组成的研究进展,以期为优化反刍动物肉和乳产品的品质提供参考依据。

Abstract

Meat and milk of ruminants are the main source of saturated and trans fatty acids in human diet, they also provide high-quality protein, essential trace elements and fat-soluble vitamins for the body. Clinical studies have shown that excessive intake of saturated fatty acids and synthetic trans fatty acids increases the risk of cardiovascular and cerebrovascular diseases. There is increasing evidence to indicate that diet is closely related to the evolution of chronic human diseases. This article reviewed the metabolic mechanism of fatty acid synthesis in ruminant production and the research progress in improving fatty acid composition of meat and milk products of ruminants by nutritional regulation and genetic selection approaches, in order to provide the reference for optimizing the quality of meat and milk products of ruminants.
