自然放牧下霍尔巴绵羊的屠宰性能和肉品质评价

摘要

本试验旨在研究自然放牧条件下仲巴县霍尔巴绵羊不同生长阶段的屠宰性能及肉品质,评估霍尔巴绵羊实际养殖生产价值。选用体况、体型基本一致的3月龄霍尔巴绵羊牧群,自然放牧,于育成期(12月龄)和成年期(24月龄)随机选取牧群内试验公羊和母羊各10只,进行体重、体尺指标、屠宰性能、肉品质指标检测。结果表明:1)在育成期,公羊的体重、体高和体长显著高于母羊(P<0.05);在成年期,公羊的体重、管围显著高于母羊(P<0.05)。2)成年羊体重和胴体重显著高于育成羊(P<0.05),但是屠宰率显著低于育成羊(P<0.05)。相关性分析发现,宰前活重与胴体重呈极显著正相关(P<0.01),与屠宰率呈极显著负相关(P<0.01),胴体重、屠宰率与宰前活重的回归模型中拟合系数(R2)分别为0.456和0.765,回归方程分别为Y=0.127X+11.656和Y=-0.955X+81.786。3)育成羊和成年羊的内脏器官占体重的比率分别为4.85%和3.56%,成年羊的头、蹄、肝脏、脾脏重量显著高于育成羊(P<0.05)。4)育成羊和成年羊羊肉中水分(73.49% vs. 73.03%)、蛋白质(23.01% vs. 23.35%)、脂肪(3.19% vs. 3.20%)含量均无显著差异(P>0.05)。5)育成羊羊肉中钙、硒含量显著高于成年羊(P<0.05),但铜含量显著低于成年羊(P<0.05),其他矿物元素含量二者间无显著差异(P>0.05)。6)育成羊和成年羊羊肉中各类氨基酸含量以及必需氨基酸总量无显著差异(P>0.05),但非必需氨基酸总量表现为育成羊显著低于成年羊(P<0.05)。育成羊和成年羊羊肉中必需氨基酸含量分别为7.86%和7.95%,必需氨基酸占总氨基酸的百分比(EAA/TAA)分别为41.48%、41.28%,必需氨基酸与非必需氨基酸的百分比(EAA/NEAA)分别为70.87%、70.29%。7)育成羊和成年羊羊肉中各类脂肪酸含量均显示无显著差异(P>0.05),但成年羊羊肉中未检出二十一碳酸(C21:0)、顺-13-二十二碳一烯酸(C22:1n)和顺,顺-11,14-二十碳二烯酸(C20:2)。由此可见,在环境友好型的自然放牧方式下,霍尔巴绵羊屠宰性能较好,羊肉风味独特、营养价值较高,可提供丰富的蛋白质和钙、磷、铁等矿物元素,富含多种人体必需氨基酸;仅考虑屠宰性能、肉品质表现的前提下,霍尔巴绵羊于育成期12月龄出栏屠宰较为合适。

Abstract

This study aimed to investigate the slaughter performance and meat quality of Dengpa County Horba sheep under natural grazing condition, and to evaluate the actual farming production value of Horba sheep. A group of 3-month-old Horba sheep with similar body condition and body type were selected for the experiment. Ten experimental rams and ten ewes were randomly selected from the group during the growing stage (12 months old) and mature stage (24 months old) for characterization testing, including body weight, body size indexes, slaughter performance and meat quality indexes. The results showed that during the growing stage, the body weight, body height and body length of the rams were significantly higher than those of the ewes (P<0.05). During the mature stage, the body weight and chest girth of the rams were significantly higher than those of the ewes (P<0.05). 2) The body weight and carcass weight of mature sheep were significantly higher than those of the growing sheep (P<0.05), but the slaughter rate was significantly lower than that of the growing sheep (P<0.05). Results of correlation analysis revealed that the live weight before slaughter was extremely significantly positively correlated with the carcass weight (P<0.01), but extremely significantly negatively correlated with the slaughter rate (P<0.01). The regression models of carcass weight and slaughter rate with live weight before slaughter had fit coefficients (R2) of 0.456 and 0.765, respectively, and the regression equations were Y=0.127X+11.656 and Y=-0.955X+81.786, respectively. 3) The proportions of visceral organ weight to body weight were 4.85% and 3.56% for growing and mature sheep, respectively. The weights of head, hoof, liver and spleen of mature sheep were significantly higher than those of the growing sheep (P<0.05). 4) The differences of moisture (73.49% vs. 73.03%) protein (23.01% vs. 23.35%) and fat (3.19% vs. 3.20%) contents in mutton for growing and mature sheep were not significant (P>0.05). 5) The contents of calcium and selenium in mutton of growing sheep was significantly higher than those of mature sheep (P<0.05), but the content of copper was significantly lower than that of mature sheep (P<0.05), and there were no significant differences in the contents of other mineral elements between them (P>0.05). 6) There were no significant differences in the contents of various amino acids and the total essential amino acids in mutton between growing and mature sheep (P>0.05), but the content of total non-essential amino acids in mutton of growing sheep was significantly lower than that of mature sheep (P<0.05). The content of essential amino acids in mutton was 7.86% and 7.95% for growing and mature sheep, respectively, the percentage of essential amino acids to total amino acids (EAA/TAA) were 41.48% and 41.28%, respectively, and the percentage of essential amino acids to non-essential amino acids (EAA/NEAA) were 70.87% and 70.29%, respectively. 7) There were no significant differences in the contents of various fatty acids in mutton between growing and mature sheep (P>0.05), but C21:0, C22:1n and C20:2 were not detected in mutton of mature sheep. These results indicate that under the environment-friendly natural grazing mode, Horba sheep has better slaughter performance, and the mutton has unique flavor and high nutritional value, which can provide rich protein, calcium, phosphorus, iron and other mineral elements, and is rich in many kinds of human body’s essential amino acids. Considering only the slaughtering performance and meat quality, it is more suitable for Horba sheep to be slaughtered at 12 months of age in the growing stage.

海拔在4 500 m以上的日喀则仲巴县具有独特的地理位置,其土地肥沃、草地丰富,是可推广发展畜牧业的重要区域,此区域生长着一种地方西藏绵羊——霍尔巴绵羊[1]。该品种绵羊个体较大,是西藏第一大绵羊;其体质结实,适应性强,耐粗饲,产肉性能好,是一种优质的高原型肉毛兼用绵羊种源[2]。2021年,国家农业农村部将霍尔巴绵羊列入“畜禽十大优异种质资源”。霍尔巴绵羊肉质鲜美、膻味小,是地道的“绿色食品”,目前的存栏量约为44万只,具有很好的市场潜力[3],但目前未见其在屠宰性能,特别是在肉品质方面的相关报道。同时,自然放牧模式可以从提高动物健康福利的方面来降低生理应激,提高放牧动物抗逆性[4],放牧采食的自然饲料也可以很好地为动物补充各类微量元素[5];并且,合理的自然可持续放牧还有助于维持草场生态平衡、提高草地肥力[6]。
本试验按照传统自然放牧的饲养管理模式,跟踪选取不同生长阶段的霍尔巴绵羊进行研究,主要通过评价霍尔巴绵羊的屠宰性能及肉品质,以期为养殖霍尔巴绵羊这一优异种质资源提供一定的理论基础,为霍尔巴绵羊遗传资源的保护和开发利用提供一定的参考。

1 材料与方法

1.1 试验动物与设计

牧区位于仲巴县西南方向的霍尔巴玉列村(平均海拔4 750 m,30°9'45″N,83°13'31″E)传统自然放牧饲养,由3月龄体重为(10.64±2.13) kg的断奶霍尔巴绵羊群起始,做好相应标记,进行跟踪试验。划分12月龄为育成期、24月龄为成年期,在这2个生长阶段分别随机选择接近牧群内体重平均值的霍尔巴绵羊公、母羊各10只,测定屠宰前的体尺指标、屠宰后的屠宰性能指标,并取背最长肌备用。于8月份采集玉列村恰朗作业组草场草样,测定牧草组成及主要营养成分含量,结果如表1所示。特别注意草场分为轻度放牧区(HF)、中度放牧区(HZ)和重度放牧区(HH),表现为放牧时长占比总放牧时长的比例分别为10%、30%、60%。

1.2 测定指标及方法

体尺、体重测定:使用测杖、卷尺测量测定育成羊和成年羊的体尺指标(包括体高、体长、十字部宽、胸围、管围)[7]和体重。
屠宰性能和各器官重测定:屠宰前12 h禁食,前2 h禁水,屠宰前测定宰前活重。胴体参照GB/T 9961—2008进行分割、称重,测量前腿肉重、骨重、花油重、板油重、胸下肉重、左半净肉、肩甲肉重、肋肉重、腰肉重、后腿肉重,并计算屠宰率。测定的屠宰性能指标主要包括胴体重、胴体长、器官(包括头、蹄、心脏、肝脏、肺脏、脾脏、肾脏、空胃、血、皮)重量、眼肌面积、骨重和胴体净肉率等。具体方案为:屠宰放血后,除皮毛、头、蹄和内脏器官,但保留肾脏重量为胴体重;全部剔下胴体上的剩肉,剩肉重量为净肉重;胴体上剩肉分离后的全部骨骼重量为骨重;胴体重加上脏器外周脂肪重与宰前活重的百分比为屠宰率;净肉重与胴体重的百分比为胴体净肉率。
羊肉营养成分含量测定:胴体称重后抽取10份霍尔巴绵羊的羊肉,测定水分、蛋白质和脂肪这3种常规营养成分的含量,检测方法分别参照国家标准GB 5009.3—2016、GB 5009.5—2016、GB 5009.6—2016。羊肉矿物元素钙、磷、铁、锰、锌、硒、镁、铜含量分别参照国家标准GB 5009.92—2016、GB 5009.87—2016、GB 5009.90—2016、GB 5009.242—2017、GB 5009.14—2017、GB 5009.93—2017、GB 5009.241—2017、GB 5009.13—2017进行测定。氨基酸含量的测定方法为:准确称取冷冻干燥粉碎后的肉样50 mg,加入6 mol/L盐酸(HCl)15 mL,再置入110 ℃恒温干燥箱内水解24 h,后过滤定容,取10 mL滤液进行减压干燥,再使用0.02 mol/L HCl溶解,上机,采用Hitachi L-8800(Hitachi,日本)全自动氨基酸分析仪(进样量25 μL,进样柱:PA-10,2 mm×250 mm,梯度洗脱)。使用气相色谱法测定羊肉脂肪酸含量,具体操作为:准确称取冷冻干燥粉碎后的肉样1 g,混合2 mL氢氧化钠甲醇溶液,同时添加100 μL十九烷酸甲酯,在80 ℃恒温水浴30 min,后加入3 mL三氟化硼甲醇混合溶液,再水浴30 min,冷却至室温加入1 mL正己烷振荡萃取得100 μL上层液,最后用正己烷定容至1 mL,上机,采用GC1120气相色谱仪(上海伍丰科学仪器有限公司)进行测定。色谱条件:HP-88毛细管柱,氢火焰检测器法(FID法),进样器温度260 ℃,检测器温度280 ℃,氢气(H2)流量40 mL/min,空气流量400 mL/min,尾吹氮气流量25 mL/min,分流比30:1。

1.3 数据统计与分析

使用Excel 2021对测量数据进行记录和简单整理,采用SPSS 19.0软件对霍尔巴绵羊体重与体尺指标进行双变量相关性分析,其他相关数据进行单因素方差分析(one-way ANOVA),并采用 Duncan氏法进行多重比较。结果以平均值±标准差(mean±SD)表示,P<0.05表示差异显著。

2 结果与分析

2.1 霍尔巴绵羊的体重和体尺指标

由表2可知,12月龄时,公羊的体重、体高和体长均显著高于母羊(P<0.05),十字部宽、胸围、管围在公羊和母羊之间未表现出统计学差异(P>0.05)。24月龄时,公羊的体重和管围均显著高于母羊(P<0.05),体高、体长、十字部宽、胸围在公羊和母羊之间未表现出统计学差异(P>0.05)。

2.2 霍尔巴绵羊的屠宰性能

由表3可知,不同生长阶段的霍尔巴绵羊的屠宰性能存在差异,成年羊宰前活重和胴体重显著高于育成羊(P<0.05),但是屠宰率显著低于育成羊(P<0.05)。

2.3 霍尔巴绵羊屠宰性状间的相关性分析

由表4可知,宰前活重与胴体重呈极显著正相关(P<0.01);宰前活重与屠宰率呈极显著负相关(P<0.01);宰前活重与胴体净肉率和骨重呈负相关,但相关性不显著(P>0.05);骨重与屠宰率呈极显著正相关(P<0.01)。

2.4 霍尔巴绵羊宰前活重与部分屠宰性状的回归分析

由表5可知,胴体重、屠宰率与宰前活重的回归模型中拟合系数(R2)分别为0.456和0.765。经显著性检验,2个模型均达到极显著水平(P<0.01),表明可以通过霍尔多绵羊宰前活重对其胴体重、屠宰率进行初步预测。

2.5 霍尔巴绵羊的器官指数

由表6可知,育成羊和成年羊的头、蹄和皮的总重量分别为5.4和6.5 kg,占体重的比率分别为17.21%和14.15%;内脏器官心脏、肝脏、脾脏、肺脏和肾脏总重分别为1.43和1.63 kg,占体重的比率分别为4.85%和3.56%;空胃重分别为1.12和1.22 kg,占体重的比率分别为3.22%和2.65%。同时,成年羊的头、蹄、肝脏、脾脏重量显著高于育成羊(P<0.05)。

2.6 霍尔巴绵羊羊肉营养品质分析

2.6.1 羊肉常规营养成分含量

分别抽取育成羊和成年羊10份羊肉,测定水分、蛋白质和脂肪3种常规营养成分的含量,结果如表7所示。由表中数据可知,不同生长阶段霍尔巴绵羊的羊肉水分、蛋白质和脂肪含量没有显著差异(P>0.05),育成羊和成年羊的羊肉水分含量分别为73.49%和73.03%,蛋白质含量分别为23.01%和23.35%,脂肪含量分别为3.19%和3.20%。

2.6.2 羊肉矿物元素含量

本试验测定了霍尔巴绵羊羊肉中钙、铁、锌、镁、硒、磷、铜和锰这8种矿物元素的含量,结果如表8所示。由表中数据可知,育成霍尔巴绵羊羊肉中钙、硒含量显著高于成年霍尔巴绵羊(P<0.05),但铜含量显著低于成年霍尔巴绵羊(P<0.05),其他矿物元素含量二者之间无统计学差异(P>0.05)。

2.6.3 羊肉氨基酸含量

霍尔巴绵羊羊肉中16种氨基酸含量检测结果如表9所示。育成羊和成年羊羊肉中各类氨基酸的含量以及必需氨基酸总量无统计学差异(P>0.05),但非必需氨基酸总量呈现出育成羊显著低于成年羊(P<0.05)。此外,育成羊和成年羊羊肉中必需氨基酸占总氨基酸的百分比(EAA/TAA)分别为41.48%、41.28%,必需氨基酸与非必需氨基酸的百分比(EAA/NEAA)分别为70.87%、70.29%。

2.6.4 羊肉脂肪酸含量

由表10可知,在育成羊羊肉中检测出20种脂肪酸,成年羊羊肉中仅检测出17种脂肪酸[二十一碳酸(C21:0)、顺-13-二十二碳一烯酸(C22:1n)和顺,顺-11,14-二十碳二烯酸(C20:2)未检出]。育成羊和成年羊羊肉中各类脂肪酸含量均无统计学差异(P>0.05)。

3 讨论

体尺是决定羊体型和体重的关键指标,反映了羊生长发育情况,主要受遗传、营养、生长阶段和饲养环境等多方面因素的影响。公羊、母羊体尺指标的比较结果显示,12月龄时公羊的体重、体高和体长均显著高于母羊,24月龄时公羊的体重和管围均显著高于母羊,这一结果与巴美肉羊[8]、小尾寒羊[9]的研究结果较为相似,说明公羊体型普遍大于母羊,二者在生长发育上存在明显差异,暗示性别选择可以较大程度地增加霍尔巴羊的体尺和体重,进而增加羊肉产量。
屠宰性能是肉用绵羊的重要经济性状,是品种选育的重要指标,由胴体重、屠宰率、眼肌面积等指标来体现[10-11],其中屠宰率反映产肉性能,眼肌面积反映胴体发育程度,胴体重则是经济价值的最终体现方式[12]。从测定结果来看,霍尔巴绵羊的屠宰率较高,说明霍尔巴绵羊具有较好的产肉性能。霍尔巴绵羊在育成期(12月龄)的屠宰率为54.95%,高于西藏多玛绵羊(1岁时为39.25%、2岁时为39.83%)、玛格绵羊[公羊和母羊的屠宰率分别为(45.15±2.69)%和(45.61±1.98)%]、勒通绵羊[公羊和母羊的屠宰率分别为(47.02±1.72)%和(47.80±2.31)%]、贡嘎绵羊[公羊和母羊的屠宰率分别为(45.00±1.10)%和(44.64±3.95)%]和扎溪卡绵羊[公羊和母羊的屠宰率分别为(46.69±0.95)%和(46.68±2.44)%][13-14]。本试验结果显示,不同生长阶段的霍尔巴绵羊的屠宰率存在显著差异,而当前研究结果表明,不同年龄段对陕北绒山羊[15]、对波杂肉羊[16]、云上黑山羊[17]屠宰率无显著差异,造成结果不同的原因可能是羊的品种不同,说明霍尔巴绵羊可以考虑不同生长阶段屠宰以获得最大的屠宰率、最佳的经济效益。霍尔巴绵羊器官重量测定结果显示,育成羊的器官重量占体重的比率高于成年羊,幼龄时动物内脏的重量占体重的比率过高可能是导致不同生长阶段屠宰率存在显著差异的原因。
动物屠宰性状间的相关性分析结果有助于在育种工作中开展间接选择和早期选种,从而加快遗传育种进展[18]。本研究结果显示,霍尔多绵羊的宰前活重与胴体重呈极显著正相关,说明可以通过选择大体重羊来提高胴体率,与在云上黑山羊[17]和威宁绵羊[19]上的研究结果一致。本研究建立的胴体重、屠宰率与宰前活重的回归模型中R2分别为0.456和0.765,均达到极显著水平,表明可以通过霍尔多绵羊宰前活重对其胴体重、屠宰率进行初步预测。
肌肉中含适量脂肪对于保持肌肉良好适口性和风味具有重要意义[20]。本试验测得,霍尔多绵羊育成羊和成年羊羊肉中水分含量分别为73.49%和73.03%,蛋白质含量分别为23.01%和23.35%,脂肪含量分别为3.19%和3.20%。上述结果说明霍尔多绵羊羊肉既可提供给人们所需要的蛋白质和脂肪,又可增加肉的风味和香味,使人们感到肉质柔软不油腻,肉品质较好。肉中的矿物元素含量可以作为衡量动物营养状况的指标,矿物元素作为维持体内生化途径的参与者,个体一般是通过均衡饮食来获取体内所需矿物元素[21-22]。总体来看,霍尔巴绵羊羊肉矿物元素含量丰富,而且未检出对人体有害的铅、砷、汞等元素,适合食用。本试验所测霍尔巴绵羊羊肉中氨基酸含量结果表明:羊肉中16种氨基酸总量为18.97%,符合联合国粮农组织和世界卫生组织(FAO/WHO)的评价标准;FAO/WHO推荐EAA/TAA在40%左右、EAA/NEAA在60%以上为质量较好的蛋白质食品[23],育成羊和成年羊羊肉中EAA/TAA分别为41.48%、41.28%,EAA/NEAA分别为70.87%、70.29%,说明霍尔巴绵羊羊肉为优质蛋白质食品。同时,霍尔巴绵羊育成羊羊肉中钙(56.09 mg/kg)、铁(20.38 mg/kg)、铜(0.88 mg/kg)、镁(258.10 mg/kg)、硒(0.07 mg/kg)和磷(2 103.00 mg/kg)含量均高于蒙古绵羊羊肉中的钙(30.4 mg/kg)、铁(13.6 mg/kg)、铜(0.58 mg/kg)、镁(173.6 mg/kg)、硒(0.02 mg/kg)和磷(1 500.6 mg/kg)含量[24]。本试验中,羊肉中含量最高的氨基酸为谷氨酸,不同生长阶段羊肉中谷氨酸占总氨基酸的比例分别为15.94%和16.10%。谷氨酸作为肉品香味前体氨基酸之一,肉质鲜味通常取决于这类氨基酸含量的高低[25]。谷氨酸是肉品风味重要来源,对改善肉质风味起着重要作用,通常风味成分含量越高,羊肉口感越鲜美[26]。根据以往研究比较分析,霍尔巴绵羊育成羊背最长肌中氨基酸含量和组成与小尾寒羊[27]基本相当。霍尔巴绵羊羊肉品质组成独特且优良,与蒙古羊羊肉相比具有丰富的矿物元素,且与小尾寒羊羊肉氨基酸含量和组成相当。总的来说,霍尔巴绵羊羊肉营养成分全面,可提供丰富的蛋白质和钙、磷、铁等矿物元素,且氨基酸含量丰富,富含各类人体必需氨基酸,营养价值较高。
肌肉中脂肪酸的组成和含量十分重要,能够影响到肉品的营养价值和风味,对人体健康具有重要的意义[28]。本研究中,霍尔巴绵羊育成羊羊肉中比成年羊多检测出3种脂肪酸,育成羊羊肉中这3种脂肪酸含量占比低,同时2个生长阶段霍尔巴绵羊羊肉中脂肪酸含量规律是一致的,表明霍尔巴绵羊不同的生长阶段可能不会影响羊肉脂肪酸的组成。羊肉中含量较高的脂肪酸为硬脂酸和油酸。短链脂肪酸和硬脂酸是引起羊肉膻味的重要脂肪酸,摄入量过多汇导致血液胆固醇含量升高,形成动脉粥样硬化,增加患冠心病风险[29]。而有研究发现,羊肉中的硬脂酸不会升高血液中胆固醇和低密度脂蛋白的含量,其可能与硬脂酸合成途径有关,其生成的油酸不会提高胆固醇的含量[30]。油酸是单不饱和脂肪酸的主要组成成分,具有降低血脂、胆固醇的作用[31]。本研究结果显示,霍尔巴绵羊育成羊和成年羊羊肉中油酸占总脂肪酸的比例分别为38.73%和39.28%,说明霍尔巴羊羊肉可能具有较高的保健作用。
本次研究取得的相关有效结果对霍尔巴绵羊的养殖经验和推广有重要的实际意义,未来的研究方向应着手于对霍尔巴绵羊群体繁殖效率的探索,以达到对养殖霍尔巴绵羊这一优质经济品种的科学合理规划。

4 结论

依靠当地独特的地理自然环境,自然放牧条件下霍尔巴绵羊屠宰性能较好,羊肉营养成分全面,可提供丰富的蛋白质和钙、磷、铁等矿物元素,富含各类人体必需氨基酸,风味独特、营养价值较高;在仅考虑屠宰性能和肉品质表现的前提下,霍尔巴绵羊于育成期12月龄出栏屠宰较为合适。
