饲粮钙和维生素D3水平对肉仔鸡生长性能、屠宰性能和肉品质的影响

摘要

本试验旨在研究饲粮钙和维生素D3水平对肉仔鸡生长性能、屠宰性能和肉品质的影响。试验采用2×2完全随机设计,选用21日龄爱拔益加肉仔鸡240只,随机分成4个处理,每个处理6个重复,每个重复10只鸡。饲养时间为28 d。试验以玉米-豆粕型饲粮为基础饲粮,共设2个钙水平(0.90%和1.15%)和2个维生素D3水平(750和5 000 IU/kg),组成4种试验饲粮。结果表明:1)饲喂含有1.15%钙和5 000 IU/kg维生素D3的饲粮21 d对生长性能影响不显著(P>0.05),饲喂28 d对生长性能影响显著(P<0.05);2)1.15%的钙对腹脂率影响显著(P<0.05);3)1.15%的钙对肌肉剪切力影响极显著(P<0.01),5 000 IU/kg维生素D3对肌肉剪切力影响不显著(P>0.05),钙和维生素D3的互作效应对肌肉剪切力影响显著(P<0.05)。以上研究结果表明,长期饲喂含有1.15%钙和5 000 IU/kg维生素D3的饲粮将会降低肉仔鸡生长性能;1.15%的钙能降低肉仔鸡的腹脂率,减小肌肉剪切力,从而提高肉品质。

Abstract

This experiment was conducted to study the effects of calcium and vitamin D3 on growth, slaughter performance and meat quality of broiler chickens. Using a 2×2 completely randomized design, two hundred and forty 21-day-old AA broilers were randomly divided into 4 treatments with 6 replicates per treatment and 10 chickens per replicate. The experiment lasted for 28 d. A corn-soybean meal diet was the basal diet. Calcium levels were 0.90% and 1.15%, respectively, and vitamin D3 levels were 750 and 5 000 IU/kg, respectively, in four kinds of experimental diets. The results showed as follows: 1) 1.15% of calcium and 5 000 IU/kg of vitamin D3 had no significant effect on the growth performance during the prior period (21 d) (P>0.05), but had a significant effect during the later period (28 d) (P<0.05); 2) 1.15% calcium had a significant effect on abdominal fat (P<0.05); 3) 1.15% calcium had a significant effect on muscle shear force (P<0.01), while 5 000 IU/kg vitamin D3 had no significant effect on muscle shear force (P>0.05), and the interaction of calcium and vitamin D3 had a significant effect on muscle shear force (P<0.05). The above results indicate that feeding a diet containing 1.15% calcium and 5 000 IU/kg vitamin D3 for a long time will reduce growth performance of broilers. But 1.15% calcium can improve meat quality by reducing the percentage of abdominal fat and muscle shear force in broilers.[Chinese Journal of Animal Nutrition, 2010,22(6):1544-1550]
