Abstract

Not only the health of dairy cows is affected by heat stress, but also the production and quality of their milk. Milk protein as one of the most important components in cow's milk, the content and quantity are both affected by gene, environment and endocrine hormone. However, the previous studies results for the effects of heat stress on the milk protein quantity and production are inconsistent. Thus, this paper reviewed the mechanism of gene networks for the redistribution of the nutrients caused by the changes of endocrine hormones, and the response and transcriptional of milk protein synthesis of cows under heat stress, which could affect the casein synthesis of milk, in order to supply some bases for the future study.
