Comparative Study on Fattening Performance, Slaughter Performance and Meat Quality between Wether Lambs and Ewe Lambs of Cashmere Goats under Grazing with Supplementary Feeding Conditions

Abstract

This experiment was conducted to study the differences in fattening performance, slaughter performance and meat quality between wether lambs and ewe lambs of cashmere goats under grazing with supplementary feeding conditions, aiming to provide a theoretical basis for formulating scientific fattening schemes for cashmere goats. Forty 4-month-old weaned Albas white cashmere goats with similar body condition were selected and divided into wether lamb group and ewe lamb group according to sex, with 20 lambs in each group. The experimental period was 97 days, including a 7-day pre-test period and a 90-day formal test period. The formal test period was divided into early fattening stage (days 1 to 30), mid fattening stage (days 31 to 60) and late fattening stage (days 61 to 90). The results showed as follows: 1) compared with the ewe lamb group, the final body weight and average daily gain of the wether lamb group significantly increased (P<0.05), and there was a tendency to increase in total dry matter intake (P=0.085) and forage dry matter intake (P=0.089). 2) Compared with the ewe lamb group, the live weight before slaughter, eye muscle area, head and hoof weight, heart weight, omasum weight and small intestine weight of the wether lamb group significantly increased (P<0.05); the carcass weight (P=0.086), skin and wool weight (P=0.078) and complex stomach weight (P=0.052) showed a tendency to increase. 3) Compared with the ewe lamb group, the tail fat weight of the wether lamb group significantly increased (P<0.05), and there was a tendency to increase in GR value (P=0.062); no significant differences were observed in perirenal fat weight, omentum majus fat weight and mesentery fat weight (P>0.05). 4) Compared with the ewe lamb group, the eye muscle meat color score of the wether lamb group significantly decreased (P<0.05), with a tendency to decrease in redness (a*) value (P=0.082) and a tendency to increase in shear force (P=0.086). In conclusion, under grazing supplementary feeding conditions, wether lambs of cashmere goats exhibit better fattening performance, slaughter performance and fat deposition capacity, while ewe lambs show better meat tenderness and brighter meat color.

阿尔巴斯白绒山羊来源于内蒙古自治区,是闻名全球的地方优良品种,兼具产绒与产肉双重价值,主要分布在内蒙古自治区鄂尔多斯市及周边地区。该品种绒山羊的肉质鲜美、风味独特,且具有低胆固醇、高蛋白质的特点,还富含对人体健康有益的多不饱和脂肪酸,因此深受广大消费者青睐[1]。内蒙古地域广袤,草地面积辽阔,是我国草原畜牧业的主要产区。然而,由于天然草场的营养物质含量受季节的影响,在春、冬两季,牧草产量不足且草质木质化严重,导致营养物质含量大幅下降,绒山羊因摄入营养不足而出现体重降低的现象。已有大量研究表明,对绒山羊进行合理补饲,可有效提高其生长性能[2]并改善肉品质[3]。性别是影响羔羊生长发育的关键因素之一,不同性别的羔羊在饲料转化率和营养沉积效率上存在差异,进而对体重和日增重产生显著影响[4]。去势不仅能改变育肥羊的生长特性、调节生长速度,还可提高其脂肪沉积率[5]。在绒山羊生产中,仅有少量公羔和母羔被选留作为后备种羊,群体中大部分个体均被淘汰用于育肥。目前针对阿尔巴斯白绒山羊性别差异对育肥性能的影响尚未开展系统研究。因此,本研究以阿尔巴斯白绒山羊羔羊为试验对象,对比分析绒山羊羯羔与母羔在育肥性能、屠宰性能及肉品质方面的差异,以期为绒山羊羔羊育肥方案的科学制定,以及生长性能与肉品质的提升提供基础理论参数支持。

1 材料与方法

1.1 伦理声明

试验于2024年8—11月进行,阿尔巴斯白绒山羊由内蒙古鄂尔多斯亿维白绒山羊有限公司提供。所有动物试验程序均已获得内蒙古农业大学实验动物福利与伦理委员会的许可(批准编号:NND2023122)。

1.2 试验设计与饲粮

采用单因素试验设计,选取40只体况相近的4月龄断奶阿尔巴斯白绒山羊,根据性别分为羯羔组和母羔组,每组20只。试验期97 d,包括7 d预试期及90 d正试期,其中正试期分为育肥前期(第1~30天)、育肥中期(第31~60天)和育肥后期(第61~90天)。试验全程严格遵循种源地标准化饲养管理制度:每日07:00—18:00实施天然草场轮牧,19:00按每头300 g/d补饲风干玉米,玉米营养物质含量(风干基础)为:干物质(DM)87.61%、粗蛋白质(CP)7.26%、粗脂肪(EE)3.10%、中性洗涤纤维(NDF)10.35%、酸性洗涤纤维(ADF)2.70%、钙(Ca)0.07%、磷(P)0.20%。试验期间羔羊自由饮水。放牧时羔羊采食牧草的营养水平见表1。

1.3 指标检测与方法

1.3.1 玉米和牧草营养物质含量

采用模拟采样法采集草样:在试验羊随群放牧期间,用望远镜同步观测记录羔羊的采食行为(单位时间采食口数、牧草种类及部位),并跟随羊只移动实时模拟采集相应种类、高度和数量的牧草样本,连续采集5 d。采集结束后,将每只羊的草样全部混合,于-20 ℃冷冻保存。牧草和玉米的DM、CP、EE、NDF、ADF、Ca和P含量分别参照GB/T 6435—2014、GB/T 6432—2018、GB/T 6433—2025、GB/T 20806—2022、NY/T 1459—2022、GB/T 6436—2018和GB/T 6437—2018的方法测定。

1.3.2 育肥性能

在正试期开始及育肥前期、中期、后期结束时分别对各组羔羊进行空腹称重,计算平均日增重(ADG),将正试期开始时的体重记为初始体重,育肥后期结束时的体重记为终末体重。分别于育肥前期、中期和后期结束前10 d,每组随机选择6只羊测定干物质采食量(DMI),包括5 d预试期和5 d正试期。干物质采食量的测定采用全收粪法结合内源指示剂法[6],内源指示剂为酸不溶灰分(AIA)。正试期内,每天采用粪袋法收集每只羊的全部粪便,每日收集3次,称重后记录日排粪量;同时每次采集50 g粪样,于-20 ℃冷冻保存。试验结束后,将每只羊的全部粪样进行混合,经65 ℃烘干、40目粉碎后保存待测。依据干物质采食量和平均日增重计算料重比(F/G)。
参照Vogtmann等[7]的方法测定粪便、牧草和玉米中AIA含量。干物质采食量参照《天然草场放牧羊采食量测定技术规程》(DB15/T 3443—2024)的方法计算,公式为:
牧草干物质采食量(kg)=[每日排出粪DM量(kg)×粪中AIA含量(%)-每日采食玉米DM量(kg)×玉米中AIA含量(%)]/牧草中AIA含量(%);
总干物质采食量(kg)=牧草干物质采食量(kg)+玉米干物质采食量(kg)。

1.3.3 屠宰性能、组织器官发育及脂肪沉积

养殖试验结束后,每组随机选取6只试验羊称重后进行屠宰,宰前禁食12 h,禁水2 h。试验羊宰杀放血后,去除头、蹄、睾丸、皮毛及内脏(保留肾脏和肾周脂肪),得到胴体。将胴体沿背脊中线一分为二,以左侧第12肋骨与背最长肌交界处为基准点,测定胴体GR值和眼肌面积,并保留左侧眼肌用于肉品质相关指标的测定。参照《内蒙古绒山羊生产性能鉴定技术规程》(DB15/T 1529—2018)测定宰前活重、胴体重,并计算屠宰率[屠宰率(%)=100×胴体重/宰前活重];测定皮毛重、头蹄重、小肠重、大肠重、胃重(包括复胃重及瘤胃、网胃、瓣胃、皱胃重)、心脏重、肝脏重、脾脏重、肺脏重、肾脏重、胰腺重,并计算各组织器官重量占宰前活重比例;测定肠系膜脂肪重、肾周脂肪重、大网膜脂肪重和尾脂重。

1.3.4 肉品质

参照《肉与肉制品pH测定》(GB/T 9695.5—2008)的方法使用pH计测定宰后45 min和24 h眼肌pH,记为pH45 min和pH24 h。参照Catrileo等[8]的方法使用色差仪测定肉色中亮度(L*)、红度(a*)和黄度(b*)值;参照夏安琪等[9]的方法测定剪切力;参照《羊胴体等级规格评定规范》(NY/T 2781—2015)测定大理石花纹值和肉色评分;参照柴建民等[10]和Moreno等[11]的方法测定失水率、滴水损失和蒸煮损失,计算公式如下:
失水率(%)=100×[肉样压前重量(g)-肉样压后重量(g)]/肉样压前重量(g);
滴水损失(%)=100×[肉样滴水前重量(g)-肉样滴水后重量(g)]/肉样滴水前重量(g);
蒸煮损失(%)=100×[肉样蒸煮前重量(g)-肉样蒸煮后重量(g)]/肉样蒸煮前重量(g)。

1.4 数据统计与分析

试验数据采用SAS 9.0软件进行统计分析。育肥性能数据(包括平均日增重、总干物质采食量、牧草干物质采食量及料重比)采用MIXED模型进行分析,以性别、育肥阶段及性别×育肥阶段的交互作用作为固定效应,动物个体作为随机效应;初始体重采用t检验分析;终末体重、屠宰性能和肉品质采用协方差分析。结果以平均值和均值标准误(SEM)表示,P<0.05表示差异显著,0.05≤P<0.10表示差异有显著的趋势。

2 结果

2.1 不同性别绒山羊育肥性能的比较

由表2和表3可知,羯羔组初始体重、终末体重和平均日增重均显著高于母羔组(P<0.05),总干物质采食量(P=0.085)和牧草干物质采食量(P=0.089)较母羔组有增加的趋势;羯羔组与母羔组料重比无显著差异(P>0.05)。性别与育肥阶段对平均日增重、总干物质采食量、牧草干物质采食量和料重比均无显著交互作用(P>0.05)。

2.2 不同性别绒山羊屠宰性能的比较

由表4可知,与母羔组相比,羯羔组宰前活重和眼肌面积显著增加(P<0.05),胴体重有增加的趋势(P=0.086),屠宰率无显著变化(P>0.05)。

2.3 不同性别绒山羊组织器官发育的比较

由表5可知,与母羔组相比,羯羔组头蹄重和心脏重显著增加(P<0.05),皮毛重有增加的趋势(P=0.078),其他内脏器官和组织重量均无显著变化(P>0.05)。其中,羯羔组头蹄重和心脏重较母羔组分别增加了16.74%和12.50%。羯羔组与母羔组各内脏器官和组织重量占宰前活重比例均无显著差异(P>0.05)。

2.4 不同性别绒山羊胃肠道发育的比较

由表6可知,与母羔组相比,羯羔组瓣胃重和小肠重显著增加(P<0.05),复胃重有增加的趋势(P=0.052),其他胃肠道重量均无显著变化(P>0.05)。其中,羯羔组瓣胃重、小肠重和复胃重比母羔组增加了16.67%、19.61%和7.69%。羯羔组与母羔组各胃重量占复胃重比例以及各胃肠道重量占宰前活重比例均无显著差异(P>0.05)。

由表8可知,与母羔组相比,羯羔组眼肌肉色评分显著降低(P<0.05),a*值有降低的趋势(P=0.082),剪切力有增加的趋势(P=0.086),其他眼肌肉品质指标无显著变化(P>0.05)。

3 讨论

良好的育肥性能和屠宰性能意味着肉羊能够高效利用饲粮中的营养物质实现快速增重,屠宰后可获得较高的净肉率和优质肉质,从而降低养殖成本。干物质采食量是评估反刍动物健康状态、营养供给水平和生产潜力的核心指标,其通过营养物质的摄入与分配机制影响能量代谢的方向。当干物质采食量不足时,动物机体的有限能量会优先用于维持基础代谢,导致肌肉、乳蛋白等生产性组织的合成受阻,最终表现为饲料转化率下降和平均日增重降低,直接影响育肥性能[12]。性别对动物育肥性能存在一定影响,通常公畜生长速度更快、体重更大。程洪花[13]指出,羔羊育肥速度由快到慢依次为公羔、羯羔、母羔。Facciolongo等[14]的研究也发现,育肥羔羊中雄性宰前活重和日增重显著高于雌性。解进等[15]开展了为期60 d的养殖试验,结果表明,在初始体重无显著差异的条件下,试验结束时公羔的体重显著高于母羔。羔羊的器官发育与育肥性能密切相关,其功能协同性直接影响能量代谢、营养物质利用效率及胴体品质,是决定育肥性能的核心生物学基础。许贵善等[16]研究发现,随着饲喂水平的提高,杜寒羔羊瘤胃、网胃、皱胃和瓣胃重量均随之增加。Adugna等[17]研究发现,绵羊干物质采食量的提高可促进平均日增重和营养物质表观消化率的提升。本试验结果与之相似:羯羔组在平均日增重、瓣胃重和小肠重等指标上显著优于母羔组,同时复胃重、总干物质采食量和牧草干物质采食量较母羔组有增加的趋势。这表明绒山羊羯羔育肥性能优于母羔,可能与其干物质采食量增加、消化道发育更快及营养物质消化率提高有关。
屠宰率、宰前活重和胴体重是衡量肉羊屠宰性能的关键指标。王梦霖等[18]研究发现,陶赛特×小尾寒羊F1代公羔的屠宰体重和胴体重显著高于母羔,且在7月龄时公羔的屠宰性能优于母羔。张宏博等[19]在巴美肉羊屠宰性能的研究中也指出,6月龄巴美公羊的宰前活重、胴体重和眼肌面积等指标均优于母羊。本试验结果表明,羯羔组的宰前活重显著高于母羔组,表明在放牧补饲条件下,羯羔的屠宰性能更优,这可能与其较高的生长速度和饲料转化率有关。阉割虽会影响羊的生长速度,但可提高其脂肪沉积率[13]。GR值是衡量胴体脂肪含量的重要指标,指动物胴体第12与第13肋骨之间、距脊柱特定位置处的脂肪层厚度。本试验中,羯羔组的尾脂重显著高于母羔组,GR值也呈增加趋势,说明羯羔的脂肪沉积能力更强,育肥优势更为突出;同时,羯羔组的眼肌面积大于母羔组,表明其产肉性能更优。这与课题组前期关于阿尔巴斯白绒山羊羔羊屠宰性能的研究结果相似[4]。上述差异可能源于羯羔去势后睾酮水平下降,导致机体能量消耗减少,消化酶活性提高,饲料转化率提升,基础代谢损耗降低,从而使能量更优先用于肌肉和脂肪的沉积[20]。
肉色评分通过感官评估或仪器检测量化肌肉色泽,是消费者判定肉质新鲜度与商品价值的关键依据。其中,a*值可量化肌肉中氧合肌红蛋白的浓度,反映肉色的氧化稳定性与感官吸引力;剪切力则通过机械测试衡量肌肉纤维抵抗切割的强度,其数值与嫩度呈负相关。本试验中,绒山羊母羔的眼肌肉色评分显著高于羯羔,且a*值呈增加趋势,表明母羔肉色更为鲜亮稳定,这可能与性激素(如雌激素)调控下肌红蛋白抗氧化代谢增强及肌内脂肪对光线的散射效应有关,其具体机制有待后续研究验证。同时,母羔组眼肌的剪切力较羯羔组有降低的趋势,与Lind等[21]的研究结果基本一致,提示其嫩度更优。这一差异或源于母羔肌纤维直径较小、胶原交联密度较低,且肌内脂肪的润滑作用可缓解纤维间的机械阻力。张宏博等[19]的研究也表明,4月龄母羔的a*值显著高于公羊,而剪切力显著低于公羊,与本试验结果趋势一致。
本试验通过系统评估育肥效率、屠宰指标及肉质参数,从多维度解析了性别差异对阿尔巴斯白绒山羊育肥性能、屠宰性能及肉品质的影响,为该品种依据性别制定特异性育肥策略提供了科学依据。然而,上述试验结果需考虑品种与年龄的潜在影响,其适用性是否涵盖其他品种或成年个体仍需进一步验证。同时,性别对育肥性能和肉品质的影响与激素分泌密切相关,一些激素(如性激素)是否通过调控羯羔和母羔的生长发育过程来改善育肥性能、屠宰性能及肉品质,仍需深入研究。此外,性别对羊肉中脂肪酸组成、氨基酸含量等品质指标的作用机制,可能需要结合脂质组学与蛋白质组学技术进行解析,以全面揭示性别差异调控肉品质的分子机理。

4 结论

在放牧补饲条件下,绒山羊羯羔表现出更优的育肥性能、屠宰性能和脂肪沉积能力,母羔则在肉质嫩度和肉色鲜亮程度上表现更佳。
